Description

Crispy Cheesy Beef Chimichangas are the ultimate Tex-Mex comfort food, made with golden-fried flour tortillas filled with seasoned ground beef, melted cheddar, and savory spices. This easy chimichanga recipe is perfect for family dinners or casual gatherings and can be fried, baked, or air-fried for a crispy finish.


Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

2 tbsp taco seasoning

1/2 cup tomato sauce

1 1/2 cups shredded cheddar cheese

6 large flour tortillas

1/4 cup vegetable oil (for frying)


Instructions

1. In a skillet over medium heat, cook the ground beef until browned and cooked through.

2. Add diced onion and minced garlic to the skillet and cook until softened.

3. Stir in taco seasoning and tomato sauce, simmering the mixture for 3–4 minutes until thickened.

4. Lay each tortilla flat and spoon the beef mixture into the center.

5. Top each with shredded cheddar cheese.

6. Fold in the sides of each tortilla and roll tightly like a burrito.

7. Heat oil in a large skillet over medium heat.

8. Fry each chimichanga seam-side down until golden brown and crispy, about 2–3 minutes per side.

9. Transfer to a paper towel-lined plate to drain excess oil.

10. Serve hot with sour cream, guacamole, or salsa.

Notes

Use burrito-sized flour tortillas for easier folding.

To lighten up, bake at 400°F for 15–18 minutes or air-fry at 375°F for 10–12 minutes.

Warm tortillas slightly before rolling to prevent tearing.
