Ingredients

12 ounces spaghetti

3 cups cooked shredded chicken

12 ounces Velveeta cheese, cubed

1 1/2 cups whole milk

1 cup low sodium chicken broth

2 tablespoons unsalted butter

4 cloves garlic, minced

1 1/2 cups shredded low moisture mozzarella

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

2 tablespoons chopped parsley


Instructions

1. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve 1/2 cup pasta water, then drain.

2. In a wide skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 60 to 90 seconds.

3. Stir in chicken broth and milk, then add Velveeta cubes. Cook, stirring, until completely melted and smooth.

4. Season the sauce with salt, black pepper, and red pepper flakes.

5. Add the shredded chicken to the sauce and simmer 2 to 3 minutes to heat through.

6. Toss in the drained spaghetti, coating every strand. Splash in reserved pasta water as needed for a glossy, silky sauce.

7. Sprinkle mozzarella over the top, reduce heat to low, cover 1 to 2 minutes until melty, then fold gently.

8. Finish with parsley, taste and adjust seasoning, and serve hot.

Notes

Use freshly grated mozzarella for the best melt and stretch.

If the sauce thickens on standing, loosen with a splash of warm milk.
