1 pound ground beef
8 ounces mushrooms sliced
1 small onion diced

2 cups beef broth
12 ounces Velveeta cheese cubed
1 cup sour cream
2 tablespoons butter

Instructions
1. Bring a large pot of salted water to a boil and cook penne until al dente according to package directions; reserve 1 cup pasta water, drain, and set aside.
2. Heat a large skillet over medium heat, add ground beef, cook until no longer pink while breaking it up; drain excess fat.
3. Add butter to the skillet, then stir in diced onion and sliced mushrooms; cook until onions are translucent and mushrooms are tender, 4 to 6 minutes.
4. Stir in minced garlic and cook 30 to 60 seconds until fragrant.
5. Pour in beef broth and bring to a gentle simmer, scraping up any browned bits from the pan.
6. Reduce heat to low; add cubed Velveeta and stir until fully melted and smooth.
7. Off the heat, stir in sour cream until the sauce is silky; season with salt and black pepper.
8. Add cooked penne to the skillet and toss to coat, loosening with splashes of reserved pasta water until the sauce clings to the pasta.

Sour cream can curdle if boiled; keep heat low when adding it.
If the sauce gets too thick, thin with a little reserved pasta water or broth.
