Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
3/4 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
Instructions
1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
2. Sear the chicken on both sides until golden brown and cooked through. Remove and set aside.
3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
4. Add the chopped sun-dried tomatoes and cook for 1 minute to release flavor.
5. Deglaze the pan with chicken broth, scraping up any brown bits.
6. Stir in the heavy cream and bring to a gentle simmer.
7. Let the sauce thicken slightly, about 3–5 minutes.
8. Add Parmesan cheese and stir until fully melted.
9. Return chicken to the skillet, spoon sauce over the top, and let it simmer for 3–4 minutes.
10. Serve hot over pasta, rice, or with crusty bread.
Notes
This dish thickens as it cools, so loosen with broth or cream when reheating.
Chicken thighs can be used for juicier results.
Add red pepper flakes if you like a little heat.
