Description

Ingredients

16 jumbo pasta shells

1 pound shrimp, peeled and deveined

1 cup mushrooms, sliced

2 cups fresh spinach

3 cloves garlic, minced

1 small shallot, finely chopped

2 tablespoons butter

1 tablespoon olive oil

4 ounces cream cheese

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Boil the jumbo pasta shells in salted water until just al dente. Drain and let them cool slightly.

2. In a large skillet, heat olive oil and butter over medium heat. Sauté shallot and garlic until fragrant, about 1 minute.

3. Add mushrooms and cook until softened, around 5 minutes. Stir in spinach until wilted. Remove from pan and set aside.

4. Add a bit more oil if needed and cook the shrimp until pink, about 2 minutes per side. Chop into bite-sized pieces.

5. Lower heat and add cream cheese and heavy cream to the same pan. Stir until smooth, then add Parmesan cheese and simmer until thickened. Season with salt and pepper.

6. In a bowl, combine shrimp, spinach, and mushroom mixture. Add a few spoonfuls of the cream sauce and mix.

7. Fill each shell with the shrimp and veggie mixture. Arrange them in a greased baking dish.

8. Pour remaining sauce over the top and sprinkle with mozzarella cheese.

9. Bake at 375°F (190°C) for 20 minutes until bubbly and golden on top. Serve hot.

Notes

This dish is best served immediately while hot and creamy.

Make sure not to overcook the pasta shells so they hold their shape when stuffed.

Feel free to substitute shrimp with scallops, crab, or a seafood mix.
