Creamy Rotel Pasta & Ground Beef is an easy weeknight dinner recipe made with ground beef, Rotel tomatoes, cheddar cheese, and pasta for a creamy, cheesy, slightly spicy meal the whole family will love. Perfect for busy nights, meal prep, or comforting leftovers.
Ingredients
1 pound ground beef
1 can (10 oz) Rotel tomatoes with green chilies (undrained)
8 ounces cream cheese
1 cup shredded cheddar cheese
8 ounces pasta (penne or rotini)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Bring a pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
2. In a large skillet over medium heat, cook the ground beef until fully browned. Drain excess grease if necessary.
3. Add garlic powder, onion powder, salt, and pepper to the beef. Stir well to combine.
4. Pour in the Rotel tomatoes (with juice) and add chunks of cream cheese to the skillet. Stir until melted and smooth.
5. Add shredded cheddar cheese and stir until creamy and well blended. Let simmer 2 minutes.
6. Add cooked pasta into the skillet and toss to coat with the sauce. Let cook together for another 2-3 minutes.
7. Serve hot with optional toppings like cilantro or more shredded cheese.
Notes
Cream cheese melts best when cubed and softened before adding.
Use any Rotel variation (mild, original, or hot) depending on your spice preference.
A splash of milk helps restore creaminess when reheating leftovers.
