Ingredients
1 pound gnocchi
1 cup pumpkin puree
3/4 cup heavy cream
2 cloves garlic, minced
1 tablespoon fresh sage, chopped
1 tablespoon butter
1/2 cup parmesan cheese, grated
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Boil the gnocchi in salted water according to package instructions, then drain and set aside. If using cauliflower gnocchi, pan-sear until golden.
2. In a skillet, heat olive oil and butter over medium heat. Sauté garlic and chopped sage for about 1 minute until fragrant.
3. Stir in pumpkin puree and heavy cream. Whisk until smooth. Season with salt and pepper, then simmer for 4–5 minutes.
4. Add cooked gnocchi to the sauce and toss gently to coat. Let simmer together for 2–3 minutes.
5. Turn off the heat and stir in the grated parmesan cheese. Serve hot with extra cheese and black pepper.
Notes
Use store-bought gnocchi for convenience, but homemade makes it even more special.
Add a touch of nutmeg for warm spice if you like it a bit sweeter.
If reheating leftovers, stir in a splash of cream to keep the sauce silky.
