Ingredients
1 cup pumpkin puree
3/4 cup heavy cream
1/2 cup whole milk
2 large eggs
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon salt
Instructions
1. Preheat oven to 325°F and boil water for a water bath.
2. In a large bowl, whisk pumpkin puree, eggs, brown sugar, and vanilla until smooth.
3. Stir in cinnamon, nutmeg, ginger, and salt.
4. Slowly whisk in cream and milk until mixture is silky.
5. Place six ramekins in a deep baking dish and divide custard mixture evenly among them.
6. Pour boiling water into the baking dish halfway up the sides of the ramekins.
7. Bake for 40–45 minutes until custards are just set with a slight jiggle.
8. Carefully remove ramekins and let cool. Chill for at least 2 hours before serving.
Notes
Custards are best served chilled.
