Ingredients
1 lb Italian sausage
1.5 lbs Yukon Gold potatoes
1 medium yellow onion
4 cloves garlic
4 cups chicken broth
1 cup heavy cream
2 cups chopped fresh kale
1 cup grated Parmesan cheese
1 tbsp olive oil
Salt and black pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent. Add minced garlic and cook until fragrant.
2. Add Italian sausage and cook until browned, breaking it up with a spoon as it cooks.
3. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce to a simmer for 10–15 minutes until potatoes are tender.
4. Stir in heavy cream and chopped kale. Simmer for 5 more minutes until the kale is wilted.
5. Add grated Parmesan and stir until melted and smooth. Season with salt and black pepper to taste.
6. Serve hot, garnished with extra Parmesan and a drizzle of olive oil if desired.
Notes
This soup freezes well, but cream may separate—stir well when reheating.
For a vegetarian version, omit the sausage and use vegetable broth.
