Description

Creamy Parmesan Spinach Rice with Spicy Garlic Chicken is a bold, comforting meal made with tender chicken thighs, creamy rice, spinach, and a spicy garlic kick. Perfect for an easy one-pan dinner, this chicken and rice recipe is flavorful, cheesy, and satisfying for the whole family.


Ingredients

1 lb boneless skinless chicken thighs

1 cup long-grain white rice

3 cups fresh spinach

3/4 cup grated Parmesan cheese

4 garlic cloves, minced

1/2 teaspoon red chili flakes

1 cup heavy cream

2 cups chicken broth

2 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Marinate the chicken thighs with minced garlic, red chili flakes, olive oil, salt, and pepper. Let sit for 15 minutes.

2. Heat a skillet over medium heat. Sear the chicken on both sides until golden and cooked through. Remove and set aside.

3. In the same skillet, add a bit more olive oil if needed and toast the rice for 1-2 minutes.

4. Add chicken broth, stir, and bring to a simmer. Cook until the rice is tender and most of the liquid is absorbed.

5. Lower the heat. Pour in heavy cream, add Parmesan, and stir in fresh spinach until wilted. Simmer until thick and creamy.

6. Return the chicken on top of the rice, spoon any juices over, and serve hot.

Notes

Let the chicken marinate while prepping the rice for efficient cooking.

Use freshly grated Parmesan for the best melt and flavor.

For extra heat, add a pinch more red chili flakes when cooking the chicken.
