Description

Creamy Parmesan Italian Sausage Ditalini Soup is a rich and cozy soup recipe featuring hearty Italian sausage, tender ditalini pasta, and a velvety Parmesan broth. Perfect for weeknight dinners or comforting leftovers, this easy sausage soup delivers big flavor with minimal effort.


Ingredients

1 tablespoon olive oil

1 pound Italian sausage

1 cup ditalini pasta

1 small yellow onion, chopped

2 medium carrots, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

2 cups fresh spinach (optional)


Instructions

1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it up as it cooks. Remove sausage and set aside.

2. In the same pot, add chopped onion and carrots. Sauté until soft, about 5-7 minutes. Stir in garlic and Italian seasoning, cook for 1 more minute.

3. Pour in chicken broth and bring to a boil. Add ditalini pasta and cook until al dente, about 10 minutes.

4. Reduce heat to low. Stir in sausage, heavy cream, and Parmesan cheese. Simmer for 5 minutes until creamy and heated through.

5. Add spinach if using, and stir until wilted.

6. Season with salt and pepper to taste. Serve hot with extra Parmesan and crusty bread if desired.

Notes

This soup thickens as it sits, so feel free to add extra broth or cream when reheating.

Use spicy sausage for a kick or mild for a kid-friendly version.

Freshly grated Parmesan melts best and gives the creamiest texture.
