Ingredients
2 large chicken breasts
1 cup grated Parmesan cheese
1 cup Italian-style breadcrumbs
2 large eggs
1/2 cup all-purpose flour
3 tablespoons butter
4 cloves garlic minced
3/4 cup heavy cream
1/2 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Instructions
1. Pound the chicken breasts to an even thickness and season with salt and pepper.
2. Dredge each breast in flour, then dip into beaten eggs, then coat in a mixture of Parmesan and breadcrumbs.
3. Heat 1 tablespoon butter with olive oil in a skillet over medium heat.
4. Fry chicken for about 4–5 minutes on each side until golden and cooked through. Remove and set aside.
5. In the same skillet, add remaining butter and garlic. Cook for 1 minute until fragrant.
6. Stir in chicken broth and bring to a simmer.
7. Reduce heat and add heavy cream. Let it simmer and thicken for 3–4 minutes.
8. Return the chicken to the skillet and spoon the sauce over the top. Simmer for 2 minutes and serve hot.
Notes
Serve with mashed potatoes, pasta, or crusty bread to soak up the sauce.
For extra crispiness, bake the chicken in a 400°F oven for 5 minutes after frying.
