Ingredients

8 oz fettuccine

1 lb beef sirloin or flank steak, thinly sliced

2 tbsp olive oil

3 tbsp salted butter

4 garlic cloves, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup beef broth

Salt to taste

Black pepper to taste

2 tbsp chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente. Reserve 1/2 cup of pasta water, then drain.

2. Heat olive oil in a large skillet over medium-high heat. Season the sliced beef with salt and pepper. Sear the beef in batches, 1–2 minutes per side, until browned. Remove and set aside.

3. Reduce heat to medium. Add butter and minced garlic to the skillet. Sauté until fragrant and golden, about 1–2 minutes.

4. Pour in beef broth to deglaze the pan, scraping up browned bits. Stir in heavy cream and bring to a simmer.

5. Add Parmesan gradually, stirring until the sauce thickens.

6. Return seared beef and cooked fettuccine to the pan. Toss to coat. Add reserved pasta water, a tablespoon at a time, to loosen sauce if needed.

7. Garnish with fresh parsley and more Parmesan. Serve hot.

Notes

Use freshly grated Parmesan for the best texture and flavor.

Don’t overcook the beef—just a quick sear keeps it tender.

Save some pasta water to adjust the sauce consistency as needed.
