Creamy Mushroom Garlic Chicken Alfredo & Hot Honey Roasted Potatoes

Description

This creamy mushroom garlic chicken Alfredo with hot honey roasted potatoes is the ultimate comfort dinner recipe. Made with juicy chicken, garlicky Alfredo sauce, and crispy sweet-spicy potatoes, it’s perfect for cozy nights, family dinners, or impressing guests. Easy to make and packed with bold flavor.


Ingredients

1 lb boneless chicken breasts or thighs

8 oz fettuccine pasta

1 1/4 cups heavy cream

3/4 cup grated Parmesan cheese

1 whole head garlic

2 tbsp olive oil

2 tbsp butter

1 1/2 cups cremini or baby bella mushrooms, sliced

1/2 tsp salt

1/4 tsp black pepper

2 tbsp chopped fresh parsley

1 1/2 lbs baby Yukon gold or red potatoes

2 1/2 tbsp hot honey

1/2 tsp paprika

1/4 tsp crushed red pepper flakes


Instructions

1. Wrap a whole head of garlic in foil and roast at 400°F for 30-35 minutes until soft and golden. Once cool, squeeze out the cloves and mash into a paste.

2. Preheat oven to 425°F. Halve or quarter potatoes and toss with 1 tbsp olive oil, salt, paprika, and red pepper flakes. Roast for 30-35 minutes, flipping halfway through.

3. Drizzle hot honey over the potatoes and return to the oven for 5 more minutes to caramelize.

4. Season chicken with salt and pepper. Heat 1 tbsp olive oil in a skillet and sear chicken until golden and cooked through. Rest and slice.

5. In another pan, melt butter and sauté mushrooms until browned. Stir in the mashed garlic, heavy cream, and Parmesan until smooth.

6. Cook fettuccine according to package instructions, drain, and add to the Alfredo sauce with the sliced chicken. Toss to coat.

7. Plate the pasta and top with parsley and extra Parmesan. Serve alongside hot honey roasted potatoes.

Notes

This dish is best enjoyed fresh, right after making.

Use chicken thighs for extra juicy texture.

Roast the garlic ahead of time for quicker prep.
