Ingredients
2 chicken breasts
8 oz pasta (fettuccine or penne)
1 cup sun-dried tomatoes (drained and chopped)
3 cloves garlic (minced)
1 cup heavy cream
1 cup chicken broth
3/4 cup Parmesan cheese (grated)
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
2 tbsp butter
Instructions
1. Season chicken with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
3. In the same pan, add remaining butter. Sauté garlic until fragrant, about 1 minute.
4. Stir in sun-dried tomatoes and cook for another 1–2 minutes to release flavor.
5. Pour in chicken broth and simmer for 2–3 minutes.
6. Reduce heat to low and stir in heavy cream. Simmer gently until slightly thickened.
7. Add Parmesan cheese and stir until melted and smooth. Season to taste.
8. Cook pasta according to package instructions. Drain and add to the skillet.
9. Slice or cube cooked chicken and return it to the pan. Toss everything to coat well.
10. Simmer 1–2 minutes, garnish with extra Parmesan and serve hot.
Notes
Use freshly grated Parmesan for best melt and flavor.
