Ingredients
1 lb chicken breasts
2 tbsp olive oil
3 garlic cloves, minced
1/2 cup sun-dried tomatoes, chopped
2 tsp Italian seasoning
1 1/2 cups heavy cream
3/4 cup parmesan cheese, grated
1/2 tsp salt
1/4 tsp black pepper
12 oz pasta of choice (penne, fettuccine, or rigatoni)
1/4 cup fresh basil, chopped (optional garnish)
Instructions
1. Season the chicken breasts with salt, pepper, and 1 tsp Italian seasoning.
2. Heat 1 tbsp olive oil in a large skillet over medium-high heat and sear chicken for 5-6 minutes on each side, until golden and cooked through. Remove from skillet and set aside.
3. In the same skillet, add the remaining 1 tbsp olive oil. Sauté minced garlic and chopped sun-dried tomatoes for about 1-2 minutes, until fragrant.
4. Lower the heat and pour in the heavy cream. Stir in the remaining Italian seasoning and bring to a gentle simmer.
5. Add grated parmesan cheese, stirring continuously until the sauce thickens slightly.
6. Slice the cooked chicken and return it to the skillet, letting it simmer in the sauce for a few more minutes.
7. Meanwhile, cook the pasta according to the package instructions. Drain well.
8. Toss the cooked pasta with the creamy chicken and sauce until fully coated.
9. Serve immediately with fresh basil and extra parmesan, if desired.
