Ingredients
1 lb shrimp, peeled and deveined
2 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1/3 cup grated parmesan cheese
1/4 cup chicken or vegetable broth
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
3 cups mashed potatoes
1 tbsp chopped fresh parsley (optional)
Instructions
1. Heat a skillet over medium heat and add 1 tablespoon of butter.
2. Sear the shrimp for 1–2 minutes per side until pink and slightly curled, then remove and set aside.
3. In the same skillet, melt another tablespoon of butter and sauté the minced garlic for 1 minute until fragrant.
4. Add the broth and simmer for 1 minute to reduce slightly.
5. Stir in the heavy cream and let it simmer for 3–4 minutes to thicken.
6. Add the parmesan cheese and stir until melted.
7. Season the sauce with salt, pepper, and lemon juice.
8. Return the shrimp to the pan and let simmer for 1 more minute to heat through.
9. Spoon mashed potatoes onto plates and top with creamy garlic shrimp.
10. Garnish with parsley if desired and serve warm.
Notes
Use fresh or frozen shrimp (thawed and dried) for best texture.
For a richer sauce, add a touch more parmesan.
