Ingredients
1 lb chicken breasts
8 oz spaghetti
3/4 cup grated parmesan cheese
1 cup heavy cream
3 garlic cloves, minced
2 tbsp butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1/2 cup shredded mozzarella cheese
Instructions
1. Season chicken breasts with salt, pepper, and Italian seasoning.
2. Heat butter and olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Set aside.
3. Bring salted water to a boil and cook spaghetti until al dente. Reserve some pasta water and drain.
4. In the same skillet, add more butter if needed. Sauté minced garlic for 30 seconds.
5. Pour in heavy cream and simmer. Whisk in parmesan cheese until melted and smooth. Add pasta water to adjust thickness.
6. Toss spaghetti in the sauce and stir in mozzarella until melted.
7. Slice chicken and serve over spaghetti. Spoon extra sauce on top and garnish with more parmesan if desired.
Notes
Use freshly grated parmesan for the smoothest sauce.
