Ingredients

2 chicken breasts

2 cups sliced cremini mushrooms

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon black pepper

8 ounces fettuccine pasta

2 tablespoons chopped fresh parsley


Instructions

1. Slice chicken breasts into bite-sized pieces and season with salt and pepper.

2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.

3. Add chicken and cook until golden brown and cooked through, then remove and set aside.

4. Add remaining butter to the same skillet and sauté mushrooms until browned and softened.

5. Add minced garlic and cook for 1 minute until fragrant. Optional: deglaze with a splash of chicken broth or white wine.

6. Pour in the heavy cream and bring to a gentle simmer.

7. Stir in Parmesan cheese until fully melted and the sauce thickens.

8. Return chicken to the skillet, add cooked fettuccine pasta, and toss until fully coated in the sauce.

9. Sprinkle with chopped parsley and more Parmesan before serving.

Notes

Use freshly grated Parmesan for best melting and flavor.

Deglazing the pan adds depth to the sauce—don’t skip it if you have broth or wine on hand.

If reheating, add a splash of cream or milk to loosen the sauce.
