Ingredients

1 pound rigatoni pasta

1 pound boneless, skinless chicken breasts or thighs

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

3 tablespoons unsalted butter

5 garlic cloves, minced

1 cup heavy cream

1/2 cup chicken broth

3/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook rigatoni until al dente. Reserve 1 cup of pasta water, then drain and set aside.

2. Season chicken with salt and pepper. In a skillet, heat olive oil over medium heat and sear chicken until golden and fully cooked. Remove and slice.

3. In the same skillet, lower heat and melt butter. Add minced garlic and sauté until fragrant, about 1 minute.

4. Stir in chicken broth and heavy cream. Let simmer until slightly thickened. Add Parmesan and Italian seasoning, stirring until smooth.

5. Return rigatoni and sliced chicken to the skillet. Toss to coat everything evenly. Add pasta water to loosen sauce if needed.

6. Garnish with chopped parsley if using. Serve warm and enjoy!

Notes

This dish tastes best served fresh but reheats beautifully.

Add sautéed mushrooms or spinach for extra flavor and texture.

For extra richness, stir in a touch more Parmesan before serving.
