Ingredients

12 oz rotini pasta

1.5 lbs boneless skinless chicken thighs or breasts

4 tablespoons butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated parmesan cheese

1 cup chicken broth

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook rotini until al dente. Reserve 1 cup pasta water, then drain and set aside.

2. Season chicken with salt and pepper. In a large skillet, melt 2 tablespoons butter over medium heat. Add chicken and cook until golden and cooked through. Remove and set aside.

3. In the same skillet, melt the remaining 2 tablespoons butter. Add minced garlic and sauté until fragrant, about 1 minute.

4. Pour in heavy cream and chicken broth. Stir to combine and let simmer for 2–3 minutes.

5. Stir in grated parmesan and mix until the sauce becomes smooth and creamy. Adjust seasoning if needed.

6. Return chicken to the skillet, followed by the cooked rotini. Toss everything together. Add reserved pasta water as needed to loosen the sauce.

7. Garnish with chopped parsley and extra parmesan if desired. Serve warm.

Notes

Use freshly grated parmesan for the smoothest sauce texture.

Add a handful of spinach or mushrooms for an extra veggie boost.

For reheating leftovers, use a splash of cream or milk to restore the sauce.
