Ingredients

340g rotini pasta

500g boneless skinless chicken breasts, cut into chunks

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

3 tbsp unsalted butter

4 garlic cloves, minced

1 cup heavy cream

1 1/2 cups freshly grated Parmesan cheese

3/4 cup chicken broth

2 tbsp fresh chopped parsley (optional, for garnish)


Instructions

1. Cook rotini in salted boiling water until al dente. Drain and reserve a bit of pasta water.

2. Season chicken with salt and pepper. Heat olive oil in a skillet and sear chicken until golden and cooked through. Remove and set aside.

3. In the same skillet, reduce heat to medium, add butter, and sauté garlic for 1–2 minutes until fragrant.

4. Add chicken broth and simmer. Stir in heavy cream and bring to a gentle simmer.

5. Stir in Parmesan cheese until melted and sauce is creamy.

6. Return chicken to skillet. Add rotini and toss everything together. Use reserved pasta water to loosen if needed.

7. Garnish with parsley and serve warm.

Notes

Use freshly grated Parmesan for best melting and flavor.

Don’t overcook the garlic or it will turn bitter.

Reserve pasta water—it’s liquid gold for adjusting sauce texture.
