Ingredients
1 pound Italian sausage
1.5 pounds Yukon gold potatoes, diced
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 teaspoon salt
0.5 teaspoon black pepper
0.5 teaspoon red pepper flakes (optional)
3 cups kale, chopped
1 cup heavy cream
Instructions
1. In a skillet over medium heat, cook the sausage until browned and fully cooked. Break it into bite-sized pieces and drain excess grease.
2. Add chopped potatoes, onion, garlic, and cooked sausage to the crockpot. Pour in chicken broth, salt, pepper, and red pepper flakes.
3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until potatoes are tender.
4. Stir in chopped kale and heavy cream 30 minutes before serving. Let cook until kale is tender and cream is heated.
5. Adjust seasoning to taste. Serve hot with crusty bread or biscuits.

This soup freezes well without the cream—just add it fresh when reheating.
