Ingredients
2 chicken breasts
1 packet taco seasoning
1 can Rotel (diced tomatoes with green chilies)
8 oz Velveeta cheese
4 oz cream cheese
1/4 cup milk
Tortilla chips (for serving)
Instructions
1. Place chicken breasts in the bottom of a crockpot.
2. Sprinkle taco seasoning over the chicken.
3. Add the can of Rotel, including juices, over the chicken.
4. Cut Velveeta into chunks and place on top.
5. Add cream cheese on top of the other ingredients.
6. Cover and cook on low for 4–5 hours until chicken is tender.
7. Remove chicken and shred with two forks.
8. Return shredded chicken to the crockpot and stir well to combine.
9. Add milk to adjust the consistency of the cheese sauce.
10. Serve the creamy chicken mixture over tortilla chips with optional toppings.
Notes
Use freshly shredded cheese if swapping Velveeta for better meltability.
Add jalapeños or hot sauce if you like more heat.
