Ingredients
2 tablespoons butter
2 shallots, finely chopped
2 cloves garlic, minced
2 ribs celery, diced
2 tablespoons all-purpose flour
3 cups seafood stock or chicken broth
1 tablespoon tomato paste
1 cup heavy cream
2 tablespoons dry sherry
1 teaspoon paprika
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces cooked crab meat
8 ounces shrimp, peeled and deveined
1 teaspoon fresh thyme leaves
1 bay leaf
Instructions
1. Melt butter in a large pot over medium heat. Add shallots, celery, and garlic. Cook until soft and fragrant.
2. Stir in tomato paste and flour until the mixture is well coated to create a roux.
3. Slowly whisk in seafood stock. Add bay leaf and thyme. Simmer for 10 minutes to infuse flavor.
4. Remove bay leaf and thyme. Use an immersion blender to blend until smooth.
5. Stir in heavy cream and dry sherry. Season with paprika, cayenne, salt, and pepper. Simmer for 10 more minutes.
6. Add crab meat and shrimp. Simmer until shrimp is pink and cooked through.
7. Adjust seasoning to taste. Serve hot, garnished with herbs or extra crab if desired.
Notes
Use fresh or frozen seafood, just ensure it’s well-drained.
To freeze, do not add seafood until reheating to avoid rubbery texture.
