Description

Creamy Cajun Chicken Spaghetti with Garlic Mozzarella Sauce is a bold, spicy, and indulgent pasta dish made with tender chicken, mozzarella cheese, and a silky homemade garlic cream sauce. Perfect for weeknight dinners or comfort food cravings.


Ingredients

200g spaghetti

2 chicken breasts

1 tablespoon olive oil

1 tablespoon Cajun seasoning

½ teaspoon salt

¼ teaspoon black pepper

3 garlic cloves, minced

2 tablespoons unsalted butter

1 tablespoon all-purpose flour

1½ cups whole milk

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

½ cup heavy cream

2 tablespoons chopped fresh parsley


Instructions

1. Season chicken with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a skillet and sear the chicken until golden brown and cooked through. Set aside to rest, then slice.

3. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Drain, reserving 1 cup of pasta water.

4. In the same skillet, melt butter and sauté minced garlic until fragrant.

5. Stir in flour to make a roux, cooking for 1 minute.

6. Gradually whisk in the milk until smooth.

7. Add mozzarella and Parmesan cheese, stirring until melted and combined.

8. Pour in heavy cream and simmer until the sauce thickens.

9. Add cooked spaghetti to the sauce and toss to coat. Use reserved pasta water to loosen if needed.

10. Top with sliced chicken and garnish with fresh parsley. Serve hot.

Notes

Use freshly grated cheese for best melt and flavor.

Reserve pasta water to help emulsify and thin the sauce if needed.

Let the chicken rest after cooking to retain its juices when slicing.
