Description

Ingredients

250g rotini pasta

2 boneless skinless chicken breasts

2 tablespoons olive oil

2 tablespoons Cajun seasoning

2 cloves garlic, minced

2 tablespoons butter

1 cup heavy cream

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook rotini until al dente. Drain and set aside.

2. Cut the chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper.

3. Heat olive oil in a skillet over medium heat and cook chicken until browned and cooked through. Remove and set aside.

4. In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.

5. Pour in heavy cream and simmer for 3–4 minutes to slightly thicken.

6. Stir in mozzarella and Parmesan cheese over low heat until fully melted and smooth.

7. Return the cooked chicken and rotini to the skillet. Toss until everything is well coated in the sauce.

8. Simmer for 2 more minutes, garnish with parsley if desired, and serve hot.

Notes

This pasta is best served immediately while the sauce is creamy and hot.

For added veggies, toss in sautéed spinach or mushrooms before combining with pasta.

If reheating, add a splash of milk or cream to bring back the creamy consistency.
