Ingredients

12 ounces rotini pasta

1 pound boneless skinless chicken breasts

1.5 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1.25 cups heavy cream

1.5 cups shredded mozzarella cheese

0.5 teaspoon fine salt

0.25 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Bring a large pot of salted water to a boil and cook rotini until al dente; reserve 1 cup pasta water, drain, and set aside.

2. Cut chicken into bite-size pieces; toss with Cajun seasoning, salt, and pepper.

3. Heat olive oil in a large skillet over medium-high; sear chicken until golden and cooked through, then transfer to a plate.

4. Lower heat to medium; add garlic to the same skillet and saute 30 seconds until fragrant.

5. Stir in chicken broth and heavy cream; bring to a gentle simmer.

6. Reduce heat to low; add mozzarella gradually, stirring until smooth and creamy.

7. Return chicken to the skillet, add rotini, and toss to coat; splash in reserved pasta water as needed to loosen.

8. Finish with parsley and a pinch of extra Cajun seasoning to taste; serve hot.

Notes

Use low-sodium broth and seasoning if you want more control over salt.

For extra veg, fold in sauteed bell peppers or spinach before adding the pasta.

If reheating, add a splash of broth or milk to bring the sauce back to silky.
