Ingredients
12 oz linguine
2 large chicken breasts, thinly sliced
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
4 oz cream cheese
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
1 tablespoon Cajun seasoning
1 teaspoon paprika
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions
1. Bring a large pot of salted water to a boil and cook the linguine until al dente. Drain and reserve a bit of pasta water.
2. Season sliced chicken with Cajun seasoning, paprika, salt, and pepper.
3. Heat olive oil in a skillet over medium-high and cook the chicken 4-5 minutes per side until golden and cooked through. Remove and set aside.
4. In the same skillet, reduce heat to medium, melt butter, and sautée garlic for 30 seconds.
5. Pour in heavy cream and bring to a gentle simmer.
6. Stir in cream cheese until smooth, then whisk in parmesan and mozzarella until fully melted.
7. Return cooked chicken to skillet and add linguine. Toss to coat everything in the sauce, adding reserved pasta water if needed.
8. Serve immediately with chopped parsley and freshly cracked black pepper.
Notes
This dish is best served hot, straight from the skillet.
Add more Cajun spice if you want extra heat.
A splash of milk can revive the sauce when reheating leftovers.
