Ingredients

200g fettuccine pasta

2 chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

3 garlic cloves, minced

1 cup heavy cream

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons butter

Salt and pepper to taste


Instructions

1. Coat chicken breasts with Cajun seasoning.

2. Heat olive oil in a skillet and sear the chicken on both sides until golden and cooked through. Remove and let rest.

3. Boil fettuccine in salted water until al dente. Reserve ½ cup pasta water, then drain.

4. In the same skillet, melt butter and sauté garlic until fragrant.

5. Pour in heavy cream and bring to a simmer.

6. Gradually add mozzarella and Parmesan, stirring until the sauce is smooth.

7. Slice cooked chicken and return to the skillet.

8. Add the fettuccine and a splash of pasta water, tossing everything to coat.

9. Season with salt and pepper to taste.

10. Serve hot, garnished with Parmesan or parsley.

Notes

Always reserve some pasta water for adjusting sauce consistency.
