Description

Ingredients

1 ¾ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup unsalted butter, softened

4 ounces cream cheese

½ cup milk

1 cup fresh or frozen cranberries

1 tablespoon sugar (for cream cheese filling)

1 egg (for cream cheese filling)


Instructions

1. Preheat oven to 350°F and grease or line a standard loaf pan with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a small bowl, beat cream cheese with 1 tablespoon sugar and 1 egg until smooth to make the swirl filling.

4. In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.

5. Alternately add flour mixture and milk, mixing gently until just combined. Fold in cranberries.

6. Pour half the batter into the pan, then layer the cream cheese filling. Top with remaining batter.

7. Swirl gently with a knife to create a marbled effect.

8. Bake for 55–65 minutes or until a toothpick comes out clean.

9. Cool in pan for 10 minutes, then transfer to wire rack and cool completely before slicing.

Notes

This loaf slices best when completely cool.

You can use fresh or frozen cranberries—no need to thaw.

Wrap leftovers well and freeze slices for easy future snacking.
