Ingredients
1 ¾ cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
1 large egg
¾ cup orange juice
1 tablespoon orange zest
⅓ cup vegetable oil
1 teaspoon vanilla extract
1 ½ cups fresh or frozen cranberries
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
3. In a separate bowl, whisk the egg with orange juice, orange zest, oil, and vanilla extract until combined.
4. Pour wet mixture into dry ingredients and stir just until combined.
5. Gently fold in the cranberries.
6. Transfer the batter to the prepared pan and smooth the top.
7. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
9. Optional: drizzle a glaze made of powdered sugar and orange juice once cooled.

Cranberries can be used fresh or frozen, no need to thaw.
You can freeze the bread for up to 3 months if wrapped well.
