Description
A light, creamy dessert with a tart twist, these Cranberry Mousse Cups are made with whipped cream, cranberry puree, and a touch of vanilla. Perfect for holidays or any time you want a fruity mousse dessert. Serve in phyllo shells or glasses for an elegant treat.
Ingredients
1 1/2 cups cranberries
1/2 cup sugar
1/4 cup water
1 teaspoon vanilla extract
1 cup whipping cream
1 packet unflavored gelatin (about 2 1/4 teaspoons)
2 tablespoons cold water
6 to 8 phyllo cups or small dessert glasses
Instructions
1. In a saucepan, combine cranberries, sugar, and water. Simmer until berries burst and the mixture thickens slightly. Let it cool slightly and blend until smooth.
2. In a small bowl, sprinkle gelatin over cold water. Let bloom for 5 minutes, then heat gently until fully dissolved. Stir into warm cranberry puree.
3. In a mixing bowl, whip cream and vanilla extract until soft peaks form.
4. Fold cranberry mixture into whipped cream until fully incorporated and smooth.
5. Spoon mixture into phyllo cups or dessert glasses. Chill for at least 2 hours, or until set.
6. Garnish with sugared cranberries or mint before serving.
Notes
These cups are best served chilled.
Can be made a day ahead and stored in the fridge.
Use frozen cranberries if fresh are out of season.
