Ingredients
2 tablespoons olive oil
1 yellow onion, diced
3 garlic cloves, minced
2 medium carrots, peeled and chopped
1 tablespoon tomato paste
1 can (28 ounces) crushed tomatoes
4 cups vegetable broth
1 teaspoon Italian seasoning
9 ounces cheese tortellini
0.5 cup heavy cream
0.5 teaspoon salt (or to taste)
0.25 teaspoon black pepper
Fresh basil, chopped (optional for garnish)
Instructions
1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until soft, about 5 minutes.
2. Add the garlic and carrots, cooking for another 3 to 4 minutes until fragrant.
3. Stir in the tomato paste and cook for 1 minute to deepen the flavor.
4. Add crushed tomatoes, vegetable broth, and Italian seasoning. Bring the mixture to a simmer and cook uncovered for 15 minutes.
5. Add tortellini and cook according to the package instructions, usually about 6 to 8 minutes.
6. Reduce heat to low, stir in the heavy cream, and season with salt and pepper. Let it heat through gently.
7. Serve hot, garnished with fresh basil if desired.

Let the soup rest for a few minutes before serving to enhance flavor.
For extra texture, add a handful of spinach in the last few minutes of cooking.
If freezing, add the tortellini fresh when reheating to avoid mushy pasta.
