Ingredients
1 cup unsalted butter
1 cup granulated sugar
1 egg yolk
1⁄4 cup eggnog
1 teaspoon vanilla extract
2 1⁄2 cups all-purpose flour
1 teaspoon baking powder
1⁄2 teaspoon salt
1⁄2 teaspoon ground nutmeg
1 cup powdered sugar (for optional glaze)
2 tablespoons eggnog (for optional glaze)
Instructions
1. In a large bowl, cream the butter and granulated sugar until light and fluffy.
2. Add in the egg yolk, eggnog, and vanilla extract. Mix until fully combined.
3. In a separate bowl, whisk together flour, baking powder, salt, and nutmeg.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
6. Scoop tablespoons of dough, roll into balls, and slightly flatten on the baking sheet.
7. Bake for 9 to 11 minutes, until the edges are just beginning to turn golden.
8. Let cookies cool for 5 minutes on the baking sheet before transferring to a wire rack.
9. For the glaze, whisk powdered sugar and eggnog together and drizzle over cooled cookies.
Notes
Use full-fat eggnog for the richest flavor and best texture.
Don’t overbake the cookies—they should be just set and soft.
If glazing, make sure cookies are completely cooled to avoid melting.
