Ingredients
1 lb steak (sirloin or ribeye), cut into bite-size pieces
2 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp lemon juice
2 tsp Dijon mustard
1 tsp red pepper flakes
2 tbsp fresh parsley, chopped
1 tsp fresh thyme leaves (or ½ tsp dried)
1 tsp salt
½ tsp black pepper
Instructions
1. Heat olive oil in a large skillet over medium-high heat until shimmering.
2. Season the steak pieces with salt and pepper.
3. Sear steak in batches for about 1-2 minutes per side until browned. Don’t overcrowd the pan. Remove from skillet and set aside.
4. Lower the heat and add butter to the same skillet.
5. Once melted, stir in garlic, Dijon mustard, lemon juice, red pepper flakes, parsley, and thyme.
6. Let the sauce simmer for 1-2 minutes until aromatic.
7. Return steak to skillet and toss to coat in cowboy butter.
8. Cook for another minute to blend flavors.
9. Serve hot with your favorite side dish.
