Ingredients

1 lb ground beef

2 medium sweet potatoes diced

1 cup cottage cheese

2 green onions chopped


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Dice the sweet potatoes into small cubes so they roast evenly.

2. Place the sweet potato cubes on the baking sheet and drizzle with olive oil. Season with paprika, salt, and black pepper, then toss to coat evenly.

3. Roast the sweet potatoes for about 25 minutes until tender and lightly caramelized, stirring halfway through cooking.

4. While the potatoes roast, heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it apart as it cooks.

5. Season the beef with garlic powder, a pinch of salt, and black pepper, then continue cooking until fully browned and flavorful.

6. Assemble the bowls by adding roasted sweet potatoes to the base of each bowl.

7. Add a generous portion of cooked ground beef on top of the potatoes.

Notes
