Try this easy sausage chowder for a nourishing, delicious, and satisfying comfort food experience. Great for fans of sausage soup, creamy chowder, and hearty homemade meals.

Ingredients

2 tablespoons butter

1 pound Italian sausage (mild or spicy), cooked and crumbled

1 medium onion, diced

2 cloves garlic, minced

2 stalks celery, chopped

2 carrots, chopped

1 teaspoon dried thyme

4 cups chicken broth

3 cups potatoes, peeled and cubed

1 cup heavy cream

Salt and pepper to taste

Instructions

1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.

2. In the same pot, melt butter and sauté onion, celery, and carrots until softened.

3. Stir in garlic and thyme, cooking for another minute until fragrant.

4. Add the potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for about 15 minutes or until potatoes are tender.

5. Return the sausage to the pot and stir in the heavy cream. Simmer for an additional 5 minutes.

6. Season with salt and pepper to taste.

7. For a thicker chowder, lightly mash some of the potatoes in the pot.

8. Serve hot with fresh bread or biscuits.

Notes

This chowder tastes even better the next day as flavors deepen overnight.

For extra richness, substitute half-and-half with full heavy cream.

To freeze, let cool fully and store in freezer-safe containers for up to 2 months.
