Ingredients
8 oz cream cheese
3/4 cup powdered sugar
1 tsp vanilla extract
1/2 cup graham cracker crumbs
2 tbsp melted butter
1 1/2 cups shredded coconut
Instructions
1. In a large mixing bowl, beat the softened cream cheese until smooth.
2. Add powdered sugar and vanilla extract, then beat again until light and fluffy.
3. Stir in graham cracker crumbs and melted butter until well combined.
4. Cover the bowl and refrigerate the mixture for at least 1 hour.
5. Once chilled, scoop out tablespoon-sized portions and roll into balls using your hands.
6. Roll each ball in shredded coconut until fully coated.
7. Place the finished bites on a lined tray and refrigerate for at least 30 minutes.
8. Serve chilled and enjoy.
Notes
Keep hands slightly powdered with sugar to avoid stickiness when rolling.
You can use sweetened or unsweetened coconut based on preference.
