Ingredients

1 can coconut milk

4 cups vegetable broth

2 tablespoons yellow curry paste

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 medium onion, chopped

2 carrots, sliced

1 cup green beans, chopped

1 cup all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

1 tablespoon coconut oil

2 tablespoons lime juice

2 tablespoons fresh cilantro, chopped

0.25 cup water (as needed)


Instructions

1. Heat coconut oil in a large pot over medium heat. Add chopped onions, garlic, and ginger. Cook for 3-4 minutes until fragrant and translucent.

2. Stir in the yellow curry paste and cook for another minute. Add the carrots and green beans, then pour in the vegetable broth and coconut milk. Stir and bring to a simmer.

3. In a bowl, combine flour, baking powder, and salt. Add water slowly, mixing until a sticky dough forms. Drop small spoonfuls into the simmering soup.

4. Cover and let the soup simmer for 15 minutes or until dumplings are fluffy and cooked through. Stir occasionally and add more water if the broth thickens too much.

5. Turn off the heat and stir in lime juice. Ladle into bowls, garnish with chopped cilantro, and serve hot.

Notes

This soup thickens as it sits, so add broth when reheating.

You can add tofu, shredded chicken, or shrimp if you want protein.

To make it spicier, add a dash of chili flakes or Thai chili sauce.
