Description

These Coconut Almond Truffles are an easy no-bake dessert packed with coconut, almond flour, and natural sweetness. Gluten-free, dairy-optional, and perfect for healthy snacking or gifting, this truffle recipe is a quick and delicious treat for any occasion.


Ingredients

2 cups shredded coconut

1 cup almond flour

1/4 cup maple syrup

2 tablespoons coconut oil

1 teaspoon vanilla extract

1/8 teaspoon salt

1/2 cup dark chocolate chips (optional, for coating)


Instructions

1. In a medium bowl, combine shredded coconut, almond flour, maple syrup, coconut oil, vanilla extract, and a pinch of salt. Stir until the mixture is evenly moist and sticks together.

2. Refrigerate the mixture for 20 to 30 minutes until slightly firm.

3. Scoop and roll the dough into bite-sized balls using your hands. Optionally, press a whole almond into the center of each.

4. Melt the dark chocolate chips and dip each truffle to coat. Set on parchment paper.

5. Chill the truffles for 15 minutes or until the coating is set. Serve chilled.

Notes

Store in the refrigerator in an airtight container for up to 1 week.

Use unsweetened coconut to control sweetness.

Add a whole almond to the center for extra crunch and surprise.
