Ingredients
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 large egg
4 tablespoons unsalted butter (melted)
Instructions
1. Preheat oven to 425°F. If using a cast iron skillet, place it in the oven to heat.
2. In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
3. In another bowl, whisk the egg with buttermilk, then slowly add melted butter.
4. Combine wet ingredients with dry, stirring just until mixed.
5. Remove hot skillet from oven, coat with butter or oil, and pour in batter.
6. Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
7. Cool for 10 minutes before slicing. Serve warm.
Notes
Let the skillet preheat in the oven for an extra crispy crust.
Avoid overmixing the batter to keep the cornbread tender.
Stone-ground cornmeal gives a better texture than finely ground.
