Ingredients
1 lb carrots
2 tbsp butter
2 tbsp honey
1/4 tsp salt
1/8 tsp black pepper (optional)
1 tbsp chopped fresh parsley (optional)
Instructions
1. Peel the carrots and slice them into evenly sized rounds or on a bias if using whole carrots. Baby carrots can be left whole.
2. Boil the carrots in salted water for 5 to 6 minutes until just tender, then drain and set aside.
3. In a large skillet over medium heat, melt the butter and stir in the honey until the mixture is smooth and slightly bubbling.
4. Add the cooked carrots to the skillet and toss well to coat in the glaze. Cook for 3 to 5 minutes more, stirring frequently until glossy and slightly caramelized.
5. Season with salt and optional black pepper. Sprinkle with fresh chopped parsley before serving if desired.
Notes
A touch of cinnamon can enhance the warmth and sweetness of the glaze.
For deeper flavor, use maple syrup instead of honey.
