Ingredients
6 cups russet potatoes, peeled and diced
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tablespoons butter
4 ounces cream cheese

1 teaspoon black pepper
1 cup shredded cheddar cheese
2 tablespoons chopped green onions or chives
Instructions
1. Peel and dice the potatoes into small cubes. Dice the onion and mince the garlic.
2. Add potatoes, onion, garlic, and chicken broth to the crockpot. Stir to combine.
3. Cook on low for 7–8 hours or high for 4–5 hours, until potatoes are fork-tender.
4. Use an immersion blender to puree the soup to your desired consistency.
5. Stir in butter, cream cheese, and heavy cream until melted and well mixed.
6. Season with salt and pepper.
7. Stir in shredded cheddar cheese and mix until melted.
