Description

This Classic Corn Casserole recipe is an easy, creamy, and comforting side dish made with Jiffy mix, canned corn, and sour cream. It’s perfect for holidays, potlucks, or any family meal. Ingredients

1 can (15 oz) whole kernel corn, drained

1 can (15 oz) creamed corn

1 cup sour cream

1/2 cup unsalted butter, melted

1 box (8.5 oz) corn muffin mix (like Jiffy)


Instructions

1. Preheat your oven to 350°F (175°C). Grease an 8×8 or 9×9 baking dish with butter or nonstick spray.

2. In a large bowl, mix the drained corn, creamed corn, sour cream, melted butter, and corn muffin mix until fully combined.

3. Pour the mixture into the prepared baking dish and smooth out the top.

4. Bake for 45–50 minutes, or until the edges are golden and the center is just set.

5. Allow to rest for 5–10 minutes before serving warm.

Notes

The casserole will still jiggle slightly in the center when done, but it shouldn’t be runny.

You can add shredded cheddar cheese or diced jalapeños for a fun twist.

This recipe can easily be doubled for larger gatherings—just use a 9×13 dish and bake slightly longer.
