Description

This Classic Chicken Tortellini Soup is a cozy, hearty dinner made with tender cheese tortellini, shredded chicken, and rich savory broth. Perfect for weeknight meals or chilly nights, it’s an easy chicken soup with tortellini that the whole family will love.


Ingredients

2 tablespoons olive oil

1 medium yellow onion, diced

2 medium carrots, peeled and sliced

2 celery ribs, sliced

3 garlic cloves, minced

3 cups cooked shredded chicken

8 cups low-sodium chicken broth

1 bay leaf

1 teaspoon dried thyme

Salt and black pepper, to taste

12 ounces cheese tortellini

2 cups fresh spinach

1 tablespoon lemon juice


Instructions

1. Heat olive oil in a large soup pot over medium heat. Add diced onions, sliced carrots, and celery. Cook until softened, about 5 to 7 minutes.

2. Stir in minced garlic and cook for another 30 seconds until fragrant.

3. Add shredded chicken, chicken broth, bay leaf, and dried thyme. Bring to a boil, then reduce to a simmer for 10 minutes.

4. Stir in cheese tortellini and cook according to package directions, about 5 to 7 minutes until tender.

5. Remove bay leaf, then stir in fresh spinach and cook until wilted, about 1 to 2 minutes.

6. Add lemon juice and season with salt and black pepper to taste.

7. Serve warm and enjoy.

Notes

Store leftovers in an airtight container for up to 4 days in the refrigerator.

For best texture, add tortellini fresh if freezing the soup base.

Use rotisserie chicken to save time on prep.
