Ingredients
1 9-inch pie crust
1 ½ cups granulated sugar
½ cup unsalted butter, softened
3 large eggs
1 cup buttermilk
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 tablespoon lemon juice
¼ teaspoon salt
Instructions
1. Preheat the oven to 350°F (175°C). Prepare a 9-inch pie crust in a pie dish and set aside in the refrigerator.
2. In a mixing bowl, cream together the sugar and butter until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Mix in the buttermilk, vanilla extract, and lemon juice until smooth.
5. Stir in the flour and salt until just combined.
6. Pour the filling into the chilled pie crust.
7. Bake for 45 to 50 minutes or until the center is set and only slightly jiggles when gently shaken.
8. Let the pie cool completely before slicing.
9. Serve at room temperature or chilled. Optional: dust with powdered sugar or top with whipped cream.
Notes
Use whole buttermilk for a richer texture and flavor.
Allow the pie to cool fully before cutting to prevent a runny center.
Chilling overnight helps the custard set and improves the flavor.
