Description

This cinnamon roll cake recipe is the perfect blend of a soft vanilla cake and gooey cinnamon swirl, topped with a rich glaze. Easy to make, no yeast needed, and perfect for brunch or dessert. A warm cinnamon sugar dessert everyone will love!


Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

2 large eggs

2 teaspoons vanilla extract

1/2 cup unsalted butter, melted

1 cup brown sugar

1 tablespoon ground cinnamon

1 cup powdered sugar

2 tablespoons milk or cream

1/2 teaspoon vanilla extract (for glaze)


Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.

2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.

3. In a separate bowl, combine milk, eggs, and vanilla extract.

4. Gradually mix wet ingredients into the dry, stirring until just combined.

5. Add melted butter to the batter and stir until smooth.

6. In another bowl, mix brown sugar, cinnamon, and melted butter to make the swirl mixture.

7. Pour cake batter into the prepared pan. Drop spoonfuls of the cinnamon mixture on top.

8. Use a knife to gently swirl the cinnamon mixture through the batter.

9. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.

10. While cake is still warm, whisk powdered sugar, milk or cream, and vanilla to make the glaze.

11. Drizzle glaze over the warm cake and let it soak in before serving.

12. Serve warm or at room temperature.

Notes

This cake is best served warm for the gooey cinnamon effect.

You can freeze slices for later and reheat in the microwave.

Don’t overmix the swirl to keep the layers distinct and beautiful.
