Ingredients
1 cup unsalted butter
2/3 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup raspberry jam
Instructions
1. In a large bowl, beat the butter and sugar together until light and fluffy.
2. Add in vanilla extract and mix to combine.
3. Gradually mix in the flour and salt until a soft dough forms.
4. Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
5. Use your thumb or a teaspoon to press an indentation into the center of each ball.
6. Fill each indentation with a small spoonful of raspberry jam.
7. Bake at 350°F (175°C) for 12 to 14 minutes, until edges are lightly golden.
8. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Make sure the butter is at room temperature for easy creaming.
Don’t overfill the jam, as it may spill out during baking.
You can swap in other jam flavors like apricot or cherry for a twist.
