Description

This Christmas Meringue recipe is a festive holiday treat made with egg whites, sugar, and a touch of peppermint. Light, airy, and naturally gluten-free, these meringue cookies are perfect for cookie exchanges, dessert platters, and edible holiday gifts.


Ingredients

2 large egg whites

0.5 teaspoon cream of tartar

0.5 cup superfine sugar

0.5 teaspoon vanilla extract

0.25 teaspoon peppermint extract (optional)

gel food coloring (optional)

holiday sprinkles or edible glitter (optional)


Instructions

1. Preheat oven to 200°F (93°C) and line two baking sheets with parchment paper. Ensure mixing bowl and beaters are clean and dry.

2. In a stand mixer, beat egg whites on medium speed until foamy.

3. Add cream of tartar and beat until soft peaks form.

4. Increase to high speed and gradually add superfine sugar, 1 tablespoon at a time, beating until stiff and glossy.

5. Mix in vanilla extract and peppermint extract if using.

6. Gently swirl in gel food coloring for a marbled look.

7. Transfer to piping bag fitted with star tip and pipe onto prepared baking sheets.

8. Decorate with sprinkles or glitter if desired.

9. Bake for 1.5 to 2 hours, or until meringues are dry to the touch.

10. Turn off oven and let meringues cool inside with the door slightly ajar.

Notes

These cookies are sensitive to humidity, so keep them sealed airtight.

For best volume, use room-temperature egg whites.
